Healthy Snack: Frozen Nutty Banana Nibblers


With swimsuit season fast-approaching, I'm going to try and post more on healthy stuff.  Because let's face it, if you don't feel good, you don't LOOK GOOD.  So let's all jump on the eating healthy healthier bandwagon.  

This is a recipe from FitSugar.com that I have modified.  Why have I changed it up?? Because I hate yogurt!

I love bananas.  I also love bananas and peanut butter.  If I am out of peanut butter (or trying to lower my fat/calorie content by not having it), I will just slice up bananas and freeze them.  For some reason, they seem sweeter and like more of a dessert!  So, if you don't like peanut butter, frozen banana slices are a good option for you!

And if you're not up to making the entire recipe (or want to do something quick) you can freeze your banana slices then just dip them in peanut butter.  

For this recipe to be healthy, please use all natural peanut butter... not something loaded with fat, sugar, and preservatives!  You can even go to Whole Fooods (or whatever your local natural grocery is) and make fresh, all natural peanut butter OR almond butter there!

But back to the actual recipe...

Ingredients:

  • 5 medium ripe bananas
  • 1 tbsp. all natural peanut butter (original recipe says creamy, but who cares get whatever you want!)
  • 2 oz. nonfat vanilla Greek yogurt (if you dislike yogurt, see my variation below that does not include it)
Peel 1 banana and mash it with the peanut butter and yogurt; set aside.  Cut up your remaining 4 bananas into 1/4 inch or 1/2 inch slices (whatever thickness you prefer). Then make little banana sandwiches with the slices and the peanut butter & yogurt mixture.  Freeze for atleast 2 hours.

MY VARIATION:
         Since I loathe yogurt,  I mash the banana and peanut butter (use about 1/2 cup of peanut butter... whatever your liking is... if you want it less peanut-buttery then use 1/4 cup)... THEN I add a dash of vanilla extract to the mixture to give it that vanilla flavor.  By a dash, I mean... ehhh.. I'd say about 1/4-1/2 teaspoon.
