Hi, my name is Lauren and I am a complete and total carb addict. I especially love mashed potatoes, so when my roommate introduced me to cauliflower mashed potatoes, I was beyond thrilled. Had I just seen this on Pinterest, I probably would have just laughed at the notion- I never thought anything could compare to my favorite comfort food. I now stand corrected.
Ingredients:
- 1 head cauliflower, cut into bite-sized pieces
- ½ cup organic chicken stock
- ½ cup low fat or fat free sour cream
- 1 tablespoon ghee/clarified butter (regular butter works, but the others are healthier)
- 1-2 tablespoons flavoring of your choice (garlic, Spike, parmesan cheese etc.)
Directions:
- Bring large pot of water to a boil.
- Add cauliflower and boil until tender (about 10 minutes) drain
- Combine cauliflower, sour cream, chicken stock and flavoring in bowl or mixer. Blend until smooth
- Season with salt and pepper... and if you want parsley, chives, bacon bits.... the works! :)
Note: you can also use cream cheese instead of sour cream. I DEFINITELY recommend adding parmesan cheese to it. Another variation is boiling the cauliflower IN the chicken stock. It may take a few different tries to get everything perfect, but trust me... it's worth it!
